Japanese Curry Omurice

This is the perfect lazy weekend lunch. The recipe is super simple - all you need are eggs, rice and curry. I love Japanese curry but I find the boxed dried curry roux takes too long to cook and requires a lot of prep. I like the individually portioned pre-packaged curry that you just heat up and serve with rice. This recipe also works best if you have leftover rice to save time, but if you don’t you can quickly substitute with minute rice or those microwaveable rice packs from college. You can totally skip the tomatoes and spring onion of course. I added them for garnish to make the dish look more camera-ready. This dish took around 5 minutes from start to finish. I hope this will inspire you to cook something other than Shin Ramen when you’re hungover!

Sieve the whisked eggs to get a smoother consistency.

Not the most attractive looking omurice out there oops

Plate it ugly side down!

Japanese Curry Omurice

For 1

Ingredients

2 eggs
1/2 tablespoon vegetable oil for the pan
Pinch of salt
1 cup cooked rice (Japanese rice would be ideal but normal long grain rice will do just fine. If cold, reheat in microwave first)
1 package ready-to-eat Japanese curry (like these, not the dried boxed kind)

Method

  1. Boil water in a pan and submerge the pre-packaged curry to heat up its contents.
  2. Whisk the eggs together and run them through a sieve and into a bowl. Add a pinch of salt.
  3. Heat the oil in a pan on medium heat. Slowly pour the egg mixture into the pan and lower the heat to medium low.
  4. When the egg has begun to set (this will take less than a minute), spoon the warmed cooked rice onto one side of the egg. Using a spatula, carefully fold the other side of the egg on top of the rice to make an omelette (aka OMURICE!). Cook for a few more seconds.
  5. Plate the omurice and carefully pour the heated curry over it. Garnish with whatever you have on hand - something with acidity would be great, like Japanese pickled vegetables!

Creamy Crab Rigatoni

This is a simple yet decadent weeknight pasta dish that takes less than 30 minutes to make. I loved the chunks of creamy crab meat hiding inside the mezzi rigatoni (short rigatoni). However I must apologize for the quality of these photos. I left my camera at a friend's place so I had to use my phone. I tried my best to tinker with the editing on iPhoto, but the photos don't do this dish justice.

Cook the garlic on low heat until fragrant.

Stir in the crab meat.

If you don't want to, you don't have to peel them. But if you want a smoother sauce without bits of tomato skin floating around in it, it only takes a few minutes to do this step. I scored an X on top of each tomato and blanched them in boiling water for 30 seconds before peeling.

Add the stock and simmer on low heat until the tomatoes are soft.

After 15 minutes of simmering, the tomatoes have disintegrated into the sauce.

Add the cream. Simmer for another minute.

Add the cooked pasta and mix well. Turn up the heat to medium high to reduce and thicken the sauce.

Plate it up and add some shaved Pecorino. The salty cheese adds a nice sharpness.

Recipe - adapted from here

For 2

Ingredients

150g tubular pasta, preferably rigatoni or penne
1 tablespoon olive oil
2 garlic cloves, minced
1 can crab meat, around 150g
2 tomatoes, skins removed, roughly chopped
1 cup fish stock
100 ml cream
Salt
Pecorino, optional

Method

  1. To remove the skins of the tomatoes, score an X on top of each tomato and blanch in boiling water for 30 seconds. Peel back the skins when cool enough to handle.
  2. Heat olive oil in pan and added the minced garlic. Cook on low.
  3. When the garlic is fragrant, stir in the crab meat. Season with a pinch of salt.
  4. Add the chopped tomatoes and stock. Simmer on low heat until the tomatoes are soft and mushy.
  5. While the tomatoes are simmering, cook the pasta according to package instructions. Drain the pasta when it is one minute shy of al dente.
  6. When the tomatoes are soft, add the cream and simmer for another minute.
  7. Add the pasta and mix well. Turn up the heat to medium high to thicken and reduce the sauce.
  8. Shave some Pecorino on top before serving, or alternatively, add chopped parsley.

Gyudon Beef Bowl

I've always wanted to make my own gyudon. Gyudon translates to beef (gyu) bowl (don). It is such an unmistakably Japanese dish. I think the secret of a good gyudon lies in the sweet sauce that the beef cooks in. Of course, higher quality/marbling of beef will also elevate the dish, but the combination and ratio of soy, sugar, mirin and wine is the key in making this the ultimate Japanese comfort food. I found this easy recipe from Harumi Kurihara's cookbook I bought almost 10 years ago. She's like the Martha Stewart of Japan, minus the tax evasion. The sauce came out just right - sweet with depths of flavour from the soy and mirin.

Slice the onion into thin half-moons.

I got pre-sliced beef at the supermarket intended for sukiyaki or hot pot.

I used white wine, but you can also use Chinese cooking wine or sake.

It is important to use Japanese soy sauce as it is sweeter than its Chinese counterpart and also has a thinner and clearer consistency.

Bring the wine and water to a boil.

Simmer the beef and skim the scum off the top.

Add the soy sauce, sugar and mirin.

Add the onions. The original recipe called for an otoshibuta, which is a light-weight wooden drop lid placed directly on top of simmering food to distribute heat evenly. I didn't have one, so I improvised and used the lid from a smaller pan. Cook until the onions are soft.

The beef and onions soaked up all the delicious sweet and savoury flavours. I think I will add an onsen egg next time for its silky richness!

Recipe - adapted from Harumi's Japanese Cooking

For 2

Ingredients

½ cup white wine
¼ cup of water
½ an onion
250g thinly sliced beef
¼ cup Japanese soy sauce
¼ cup mirin
2 tablespoons caster sugar
2 servings of cooked Japanese rice, kept warm

Method
  1. Slice the onions into thin half moon shapes.
  2. In a saucepan (I used a frying pan), add the water and the wine. When it comes to a boil, simmer the beef for 2 minutes. Skim the scum off the top.
  3. Add the soy sauce, mirin, and sugar. Mix well.
  4. Add the onions and cover with the lid of a smaller pan, until onions are soft.
  5. Spoon the beef and onion mixture on top of rice and drizzle with pan juices.

Chorizo Carbonara

Last week I had an intense carb craving. I wanted something cheesy and starchy. I remembered there was a pack of chorizo slices leftover from my parents’ dinner party. I did a quick search of “chorizo pasta” and this easy recipe popped up. The main ingredients were chorizo, egg, cream and pasta, which I had. I substituted the whole chorizo with pre-packaged dried slices and the spaghetti with mini shells. It came out like a fancy mac and cheese. Ticked all the boxes of my carb craving!

Mix the egg and cream together in a small bowl.

Add about a teaspoon of freshly cracked black pepper.

Slice the dried chorizo and render the fat in a small pan.

Add the chorizo and oil to the cooked pasta.

Add the egg cream mixture. Make sure the heat is off or you will end up with scrambled eggs!

Mix well. The chorizo should start to color the pasta.

Serve immediately with more black pepper and shaved Parmesan.

Recipe – adapted from here

For 2

Ingredients
16 pre-packaged slices of dried chorizo
150g pasta
2 eggs
¼ cup cream
Freshly cracked black pepper
Shaved Parmesan, optional

Method
  1.  Cook the pasta according to package instructions.
  2. Meanwhile, cut the chorizo into thin strips.
  3. Combine the eggs, cream, and black pepper in a small bowl.
  4. Heat a small pan on medium and sauté the chorizo until the fat has melted. Turn off the heat.
  5. Drain the pasta, and return the pasta back to its pot with the heat off.
  6. Pour in the chorizo and melted fat into the pasta pan.
  7. Add the egg cream mixture and mix well. The residual heat from the chorizo and the pasta will cook and thicken the egg cream. Add salt to taste.
  8. Serve immediately with cracked black pepper and a generous shaving of Parmesan.

A Healthy Breakfast

I don't want to sound like a huge cliche but yes, breakfast IS the most important meal! It really helps kick start your metabolism and you will feel less tired and less likely to over eat during the day. We never ate "proper" breakfast food at home until a few years ago. I have fond memories of frosted Pop Tarts, Cap'n Crunch and Cinnamon Toast Crunch (fave!). Three years ago, Mama Bear started going to a personal trainer who was also a certified nutritionist. He set up a meal plan for her which included fresh berries and oatmeal for breakfast. He also suggested that she snack on cherry tomatoes, avocado and nuts throughout the day. Since then, our kitchen has been stocked with only healthy food items. No chips, no peanut butter, nothing. It was tough at first, but we finally caught onto Mama Bear's healthy eating habits. Recently I've been switching between having a sandwich and oatmeal with berries for breakfast.

Here is one of my favorite breakfast combos: smoked salmon with avocado, cherry tomatoes and Greek yogurt on toasted sour dough. These things taste so good together! And you get vitamins and antioxidants from the tomatoes, Omega-3s from the avocado and salmon, and probiotics from the yogurt. You'll never want to eat plain ham and cheese again.

Recipe

For 1

Ingredients

1 thick slice of sourdough, toasted
1 slice smoked salmon
1/2 small avocado
5 cherry tomatoes, halved
Freshly cracked black pepper
2 tablespoons low-fat or non-fat Greek yogurt

Method

  1. Lay the salmon on the sourdough. No butter or mayo needed!
  2. Using a teaspoon, scoop out the avocado into chunks.
  3. Add the yogurt and cherry tomatoes.
  4. Finish with black pepper.

Grilled Sardines and Tuscan Bread Salad Part 2

This is the perfect summer salad and a great accompaniment to the grilled sardines. Panzanella is a Tuscan salad made with crusty bread and tomatoes. The addition of feta and roasted red peppers gives it a Mediterranean flair. The original recipe called for anchovies in the dressing, but I didn't have any on hand so I just added a tiny bit of sea salt. The dressing came out perfect. I really liked this salad because it was super easy to make and very delicious. The sweet cherry tomatoes went well with the fragrant basil/balsamic dressing, and the creamy tangy feta was a boost of flavour. The only thing I didn't like was how the toasted ciabatta absorbed the sauce quickly and became soggy. When I make this salad again, I will be sure to add the ciabatta last. Enjoy!

Oops the pancetta was for the sardines, but here are the main components for this salad: feta, roasted red peppers, capers, cherry tomatoes and ciabatta.

Blend together a clove of garlic, extra virgin olive oil, balsamic vinegar, spring onion, basil and 3-4 cherry tomatoes. The original recipe used 1 cup of cherry tomatoes, but it was such a waste of the beautiful tomatoes, so I used only 3. It was enough to create a dressing-like consistency.

I followed the original recipe and added the toasted ciabatta before the tomatoes. The bread absorbed a lot of the sauce and became soggy real fast. I have altered the recipe below to reflect this.

Recipe - adapted from Jamie Oliver's 15 Minute Meals

For 2

Ingredients

½ small ciabatta loaf
1 clove garlic
extra virgin olive oil
3 tablespoon balsamic vinegar
2 cups mixed color cherry tomatoes, halved
½ bunch spring onion, ends trimmed
½ bunch fresh basil
1 tablespoon capers
1 cup jarred roasted red peppers, cut into 1-inch chunks
Handful feta cheese

Method
  1. Cut the ciabatta into 1 inch thick slices and toast them on both sides on a pan.
  2. Peel the garlic and put into a blender or food processor with 1 tablespoon olive oil, balsamic, 3-4 cherry tomatoes, spring onions and basil. Blend until it becomes smooth. Pour into a large serving bowl.
  3. Halve the remaining tomatoes and add to the bowl, along with the capers and peppers. Toss.
  4. Tear the toasted ciabatta into thumb-sized pieces into the bowl and toss once only to coat. Drizzle 1 teaspoon of olive oil to finish.
  5. Garnish with torn basil leaves and feta.
  6. Serve immediately with the grilled sardines.

Grilled Sardines with Tuscan Bread Salad Part 1

I'm all about weeknight dinners that are fast and hassle-free. Bonus points if they are healthy and nutritious! This recipe was taken from Jamie Oliver's 15 Minute Meals. The book had some amazing recipes (and beautiful photographs), but I was skeptical about how fast a home cook could make these meals. For me, the whole process (sardines plus salad) took about 30 minutes, between prepping the sardines and vegetables, blending sauces and taking photos of everything. But nonetheless, super fast meal! I will share with you the Grilled Sardines first, and the Tuscan Bread Salad in another post. When I made this meal, I dealt with the sardines first, and started on the salad when the sardines were in the oven. The two dishes were done pretty much at the same time.

I forgot to buy chilis at the market but luckily we had some growing in a pot outside our home! However they weren't fully grown yet and were super tiny. I decided to add them in anyway.

Baby chilis :)

The sauce consisted of spring onions, parsley, salt, olive oil, lemon juice, and chilis. For those who hate parsley, you will be glad to know that this sauce came out light and citrusy. The parsley was not overpowering.

Spread the mixture on a pan just large enough for the sardines and lay the sardines skin side up. Sprinkle the pancetta around. You can omit the pancetta, but using just a tiny bit won't do too much damage! It adds a nice smoky flavour and crunch to the dish.

After a quick 8 minutes, the sardines will be nice and crispy on top, moist and flaky on the bottom. I served the sardines just like that in the pan with the beautiful green sauce.

Verdict: I will definitely make these sardines again, but with regular sized chilis. My dish was missing a bit of heat.

Recipe - adapted from Jamie Oliver's 15 Minute Meals

For 2

Ingredients

4 spring onions (tops and white ends removed)
½ a fresh red chilli
½ bunch of fresh parsley
½ teaspoon fennel seeds
Juice of 1 lemon
1 tablespoon olive oil
Salt to taste
6 fresh sardines, heads removed, scaled and butterflied
Handful of cubed pancetta

Method
  1. Set your oven grill onto high.
  2. Put the spring onions, chilli, parsley, fennel, lemon juice, salt and olive oil in a processor, and blend until it forms a paste.
  3. Rub the paste onto a baking tray and lay the sardines on top, skin side up.
  4. Dot the pancetta throughout the sardines.
  5. Grill until golden and crispy, about 8 minutes.
